Stock map selection

Im new to tuning and nistune in general, i have a few questions that I cant find the answer to by using the search feature. For a little backround the vehicle specs.
1994 300zx convertible USDM (Originally N/A of course)
has NA to TT conversion done with a complete engine overhaul
TT pistons and squirters
N/A heads (ported slightly)
Normal deletes (EGR, TB coolant lines, ect.)
TT Auto Trans
Stock Turbos, Piping, Intercoolers, Ect.
NO Boost Soleniods, or 300zx specific turbo items!
DOES have recirc valves and factory wastegates of course
Nitrous kit THAT IS NOT being used until tuned
Stock Boost until tuned as well
52P05 N/A ECU Type 3 board
550cc Injectors
Alright for my questions
1. Im noticing that almost all the maps are the same for both na and tt engines? why?
2. With the previous question in mind, what TT maps should I use as a base to start tuning?
